There is no point looking at it from a astronomically literal view since it is used as a means to signify the end of day or night from where that person is standing at the time. Therefore, it is appropriate to coin the movement of the sun as 'sunset' and 'sunrise' because it is simply a means of establishing where the position of the sun is from one particular place.
